Wheelers Oysters is a Merimbula family story that’s been unfolding for more than half a century. Our family has farmed this estuary since the early days of the industry, learning every tide, every season, every little shift in the water that makes Sydney Rock Oysters thrive.

Today, James and Amy Wheeler are continuing the work started decades ago—investing in better infrastructure, sustainable practices, and sharing the story of Merimbula oysters with Australia’s top chefs and food lovers. From award-winning restaurants to backyard Christmas tables, if you’re eating a Wheeler oyster, you’re tasting a little bit of the Sapphire Coast.

THE SYDNEY ROCK OYSTER

Merimbula is the largest producer of Sydney Rocks in NSW, and Wheeler’s is proud to play a part in that legacy. Our oysters grow in sand and native seagrass, bathed twice a day in fresh ocean water as the tide runs through the lake entrance. It’s this clean, natural environment that gives Wheelers Oysters their signature balance and depth of flavour.
